  • Put the nectarines in a saucepan, sprinkle with sugar, and leave to extract juice, for about 30-36 hours. You will get a lot of juice.
  • Transfer the nectarines to a sieve, let the juice drain from the fruit.

  • Put a saucepan with nectarine juice on the fire, bring to a boil, boil for a couple of minutes, reduce the heat to a minimum, just to keep the syrup hot at a temperature of 90 * C.
  • Carefully dip the nectarines into the hot syrup, dip them into the syrup with a spoon, and periodically dip them into the syrup and pour the hot syrup over the fruit so that the nectarines are saturated with the hot syrup and become transparent. It's not long in time, it will take about 10 minutes. I check the readiness of the nectarines like this: I put the nectarine on a spoon, squeeze the edges with my fingers to the middle, if the nectarine shrinks, yields to compression, then it's time to take it out. The nectarine should be both slightly soft and damp inside.

You can try to make a small portion. I have been drying greens in an airfryer for many years. At low temperature and with a slightly open lid, I insert the skewer. Dries well. I'm doing this right now. By time. probably . will take longer to dry the fruit. than in an electric dryer. I'll take a chance in the near future!

Today I wanted to report new ready-made nectarines to an incomplete box of the previous batch and did not understand anything ... They became magko-wet chtoli ... as if in a syrup ... newly released, although I dried to an almost dry state, when they bend, elastic , but there was practically no juice-syrup, no stickiness (specially "overdried" so that it was reliable).
I checked the rest: strawberries and cherries almost did not change, cherries with nuts also became a little more sticky, the pear, like nectarines, became softer and, as it were, in syrup, although it was almost completely dry ...
Admin, please tell me what to do? I put today's batch of nectarines in a box and leave it in the pantry, dried it even longer, already a whitish sugar bloom began to appear on the skin ... Tasty to disgrace There are still plans to plum ... I'm at some confusion ...

Another variant of spoilage: the fruit is not matured enough in sugar syrup, there was no complete substitution of water / juice for sugar syrup, and therefore the raw juice could remain in the fruit, and it can spoil, it is still water.

All my goods did not deteriorate (yet ...), but it seemed to be damp in the cold, or the substitution of raw juice for syrup did not happen, but after all, both pears and nectarines are kept-boiled for only 10 minutes (I kept controlling the softness a little longer, since she took very hard ones)?
