Eggplant salad

Ingredients

Eggplant 3 pcs. large
Bulb onions 3 pcs. large
Sweet pepper 3 pcs. large
Tomatoes 3 pcs. large
Salt 2 tsp
Sugar 4 tsp
Vinegar 9% 1 tbsp. l.
Rast. butter 100 ml

Cooking method

  • At the bottom of a large saucepan, cut eggplants into large rings 8-10 mm thick, then onions, then pepper, tomatoes on top. Pour 100 ml of plant into a glass. oil, add vinegar there, mix. Sprinkle everything on top of the vegetables. Sprinkle with salt and sugar on top and put on fire, without closing the lid. When it boils, close the lid, reduce the heat to low and simmer for 20 minutes. (Make sure not to burn!) Allow to cool, refrigerate and eat cold the next day ...

I did not mix the salad, but put it in layers: first in a saucepan, and then, in the reverse order, already in sterilized jars, and immediately rolled it up.

Since the recipe is, in principle, similar, it is not worth opening a separate Temka. Just posting my variation on the theme:

4 medium eggplants
4 sweet peppers, pitted and cut lengthwise
Peel 4 medium onions and cut into 4 pieces
6 tomatoes in half, slices down.
Put everything in a saucepan in the specified order, sprinkle with herbs (you can dry it)
salt - 1 tsp + a pinch.
Pour in 1/2 cup 9% vinegar
3/4 cup vegetable oil.
Let it boil, and over low heat for 20 minutes.

Layer in sterilized jars in reverse order and roll up immediately.
