Ingredients

Wheat flour 1st grade 300 g
Baking flour with a high protein content 200 g
Fresh pressed yeast 10 g
Salt 10 g
Warm water, t = + 38 ° С 350 ml
Poppy (sesame, sedona) for sprinkling

Cooking method

  • Dissolve the yeast in a small amount of warm water and let it brew for 5 - 10 minutes.
  • Add the rest of the water according to the recipe, and, adding in portions the sifted flour, knead the elastic dough by adding at the end of the batch salt.
  • Knead with a hook in a kneader for 15 minutes at medium speed, roll into a ball and place in a greased dish.
  • Cover with foil and put on the 1 hour to a warm place.

  • Knead the matched dough and divide into 12 pieces by rolling each piece into a small ball.

  • Using a small spatula (Richard Bertinet recommends using a credit card) make a cross in the center of each piece of dough through incision:

  • Then turn each piece of dough through the notch in the center to the other side and shape the dough into a "star":
