Goose A la Panikovsky

Ingredients

young, not very fat goose 2-3 kg
fresh champignons 0.5KG
buckwheat grain 200 g
bulb onions 3 pcs
chicken eggs 2 pcs
cream cheese 175 g
fat cream 2-3 tbsp
sherry 70-100 ml
salt pepper taste

Cooking method

  • Inspired by Panikovsky, we recall the heroes from another novel by Ilf and Petrov - "The Twelve Chairs".

  • "Bruns imagined a big brown goose with hissing oily skin and, unable to contain himself, yelled: Musik! Goose ready ?!"

  • 1. Butcher the goose - remove the backbone, trim the neck and wing tips. Remove the skin from the neck.

  • 2. Boil buckwheat porridge, fry the diced onion. Chop mushrooms at random and fry too.

  • 3. Prepare two minced meat.
  • First: buckwheat porridge + two-thirds of an onion + two-thirds of mushrooms + half of cream cheese + one egg. Mix everything well, salt and pepper. Add cream.
  • Second mince: finely chop the goose liver, add the remaining onions and mushrooms, cheese, egg, salt, pepper.

  • 4. Sew up the goose carcass tightly, leaving a hole for stuffing. Fill with minced buckwheat and sew up to the end.

  • Sew up the skin from the neck at one end and fill with minced liver. Sew up the second hole.

  • 5. Place the prepared carcass and neck in a mold, rub it with spices again, pour in the wine and put in a preheated oven.

  • Bake, periodically pouring the resulting juice until tender (baking time largely depends on the size of the goose and its "age").

Time for preparing:

preparation - 1-1.5 hours; baking - 2-2.5 hours

Suma get off what a beauty! And I can imagine what the taste ...
It's a shame to say, but I have never eaten a baked goose in my life - it always seemed that it was incredibly difficult and, most importantly, for a very long time.
