Bohemian Pancakes Air

Ingredients

wheat flour, premium grade 260 g
milk 360 ml
egg yolks 60 g
egg whites 90 g
sugar 75 g
vanilla 1 p
baking powder 2 g
salt 2 g
rum or cognac 1 tbsp

Cooking method

  • 1. Mix flour with baking powder, separate whites from yolks.
  • 2 Whisk the yolks with vanilla sugar and rum, add salt and milk. Without stopping whipping, gradually introduce flour. The dough is obtained in consistency like very thick sour cream.
  • 3. Beat the whites, adding sugar in 4-5 steps, until smooth.
  • 4. Combine the dough with proteins (stir in, as when making a biscuit).
  • 5. Next, we proceed as with any pancakes: fry in a pan in butter until tender.

Note

The pancakes are light and airy. Serve with your favorite jam, honey. My favorite is with maple syrup.

I beat, without separating the yolks, 2 eggs into a strong foam with a pinch of salt. In flour - baking powder, and mix it with milk until smooth. Then carefully combine with egg foam and bake. It turns out biscuit cannons. I make dor blues or tuna with spicy cheese with filling (bending in half). Favorite Sunday breakfast! Thank you for the recipe!
