I'm with a report. So, the cottage cheese was taken ordinary, pounded with milk to the desired consistency. Feels like the dough turned out like for lazy dumplings, maybe a little steeper - it was glued to the hands, but the buns did not lose their shape, they were molded perfectly! Very tasty curd buns turned out. With a crispy crust! But for some reason, they are not the same as in your photo, AXIOMA, I think that for this recipe you still need to take a Dolce-type curd, as you have indicated IMHO. And then the structure will be different - a la yeast dough and the surface is smooth. I put 1h. l salt and 3 tbsp. l sugar, sprinkled sugar on top, added a little vanilla. My household ate hot crispy cottage cheese rolls with pleasure !!! The husband said that it would be MORE (how much more?) More fun if the cottage cheese was felt stronger. We are all very curd!
