Uncle Bilbo's Pies

Ingredients

Flour 250 g
Butter 75 g
Milk 100 ml
baking powder 2 tsp
Salt, nutmeg by a pinch
Boiled veal 350 g
Boiled pork heart 300 g
Red onion 1 PC.
Pickled cucumbers 1-2 pcs.
Apple 1 PC.
Cream cheese 100 g
Salt, pepper, nutmeg taste

Sugar 150 g
Milk 50 g
Butter 35 g
Molasses or honey 1 tsp
Flour 120 g
Yolk 1 PC.

Butter 75 g
Vanilla 1 sachet
Apples 600-700 g
Apple juice 200 ml
Corn starch 45 g
Water 75 g
Zest and juice of half a lime
Sugar 50 g
Apricot jam 50 g

Cooking method

  • Meat pie
  • 1. Cut onion and boiled heart into cubes and lightly fry in vegetable oil. Grate the apple on a coarse grater, cut the cucumbers as small as possible. Grind the boiled meat with a blender and combine all the ingredients for the filling. Season with salt, pepper and season with nutmeg (preferably freshly grated).
  • 2. Prepare the dough: mix flour with baking powder and grind with cold butter into crumbs.

  • Add milk, salt and nutmeg, knead the dough.
  • 3. Divide the dough into 2 unequal parts. Roll out most of the dough and place the filling on top of it.

  • Roll out the second part of the dough, cover the filling on top, pinch the edges well. Grease with an egg and bake at 180 degrees until golden brown for 30-40 minutes).

  • Apple pie
  • 1. Prepare a sponge cake (190 g eggs + 150 g sugar + 50 ml milk + 35 g butter + 120 g flour + honey or molasses). See the technology for making such a biscuit here.
  • 2. Prepare shortbread dough from the yolk, sugar, flour and butter: beat the yolk with sugar, add softened butter, without stopping whipping, bring to a creamy state. Add flour. Gather the dough into a ball. Set aside about 1/5 of the dough. Distribute the rest over the bottom of the form without making a side. Put in a preheated oven for 5-7 minutes. Remove and brush with apricot jam.

  • Boil the apple juice. Add the juice and lime zest, 50 g of sugar (sugar can be increased or decreased depending on the desired acidity in the filling). Dilute cornstarch with 75 ml of water, pour into boiling apple juice, let it thicken. Stir this mass with apples cut into thin slices.
  • 4. Sprinkle the top of the pie with crumbs from the remaining dough mixed with almonds. Place in oven on low heat for 1 hour.
