Cooking method

Handsome! The top is airy, but under the filling it is "crumpled", probably before putting the filling, it was necessary to "distance" the bottom. I sprinkle a little starch under the apples so that the excess juice does not allow the dough to jam. And I don't add sugar to apples, they start to give juice. Antonovka is generally very juicy. I took some English apples, they themselves are sweet and not so juicy. Good for filling. I think Grannies will do too. Yes, and the bottom layer, before putting the apples, must be allowed 10 minutes to come up. So that the top does not brown so much, I dilute the egg for lubrication with a little water.
