Rye bread with dispersed grain on onion-Jerusalem artichoke sourdough in KhP

Ingredients

Leaven 400 g
Dispersed wheat 200 g
Peeled rye flour 200 g
Rye bran 20 g
Fermented dry malt 1 tsp
Sea salt 1.5 tsp
Linseed oil 1 tbsp. l.
Anise seeds for sprinkling 1 tsp

Cooking method

  • I took out the sourdough from the refrigerator, fed it in two steps, left it for a day at room T 23 degrees.
  • I soaked the grain for a day, it would be better, of course, before the first shoots appear - but how did it happen.
  • Shredded in the processor.
  • In a bucket of CP - sourdough, dispersed grain, malt, flour, bran. For the dumplings program.
  • Then I added salt and linseed oil and with the timer the program "rye", only 5 hours. When the batch ended and popped out in the window - "baked goods" - sprinkled on top with grains of anise.

Lovely bread !! In terms of composition it will be very useful .. Why did not they put it to the competition, it will definitely be c. s bread.?

Once I tried to grind dried, hatched grain in the processor, but nothing came of it. But I'll definitely try the soaked one.

About grain.
If you stand up to a good pecking of the grains, then you can eat it anyway. I did just that with the last batch - I did not notice how I pecked. And I didn't hold this one a bit - you can see it in the photo. But you can eat!
Although for my taste - just on peeled rye flour with bran and sourdough - tastier!
