Ingredients

eggs 4 things
dry wine 1-2 tbsp. l.
sugar 0.5-2.5 st. l.
soy sauce 1 tsp
sunflower oil for frying 1-2 tbsp. l.
non-stick frying pan with a diameter of 20 cm

Cooking method

  • The Japanese are very fond of tamago-yaki. It is made by beating chicken eggs and then stirring in a broth that contains sugar, soy sauce, salt, and possibly other seasonings. The mixture is fried, turning several times during cooking.
  • Any Japanese who is 40 or more years old probably remembers the usual expression about childhood in the 60s: “Kyojin, Taiho, tamago-yaki”. This was a list of three things that kids would surely love: The Giants, the unbeatable professional baseball team; Taiho, the great sumo champion (yokozuna) and sports hero; and an omelet, a great example of what kids love to eat. Nowadays, people tend to have individual preferences in food, but even now tamago-yaki is a favorite dish for everyone, regardless of age. It's very easy to make at home ...
  • This is the main method of making Japanese omelet. It is usually served for breakfast and is also used for sushi.
  • 1. Beat eggs and yolk (in the classic recipe, yolk is added to four eggs ... I got by with only eggs) with a fork and strain through a sieve into a bowl. Add sugar, soy sauce, wine (I had semi-sweet wine - and I poured 1 tablespoon, and did not put sugar. You can do without wine altogether, but chop the herbs, for example) and a pinch of salt.
  • Stir well with a whisk until the sugar dissolves. Do not beat with a mixer to avoid bubbles.

  • 2. Heat a Japanese omelet or skillet over medium heat, add a little oil. Tilt the pan in different directions and spread the oil over the bottom of the pan. Remove excess with paper towels while checking the smoothness of the pan. Keep oily paper on a plate.
  • 3. Reduce heat and pour one third of the egg mixture evenly into the skillet. If an air bubble appears, the pan is too hot. Remove the pan from the heat and put it back on when the omelet begins to set.
  • 4. Pierce the air bubbles with a fork, and when the eggs begin to set, roll the omelet 2-3 times with a stick or fork. Grease the free bottom of the pan with an oil towel and push the omelet roll towards the other side of the pan.
  • 5. Brush the bottom of the pan again with an oiled paper towel, pour half of the remaining egg mixture in an even layer by tilting the pan and lifting the egg roll so that the eggs drip underneath.

  • 6. When the eggs begin to set, roll them up again, using the first roll as the core. Continue to grease the bottom of the skillet with oil and make a roll with the remaining eggs.
