Pumpkin Puree Soup (Cabotya no Kurimu Soup)

Ingredients

Pumpkin 350 g
Bulb onions 2 pcs. middle
Carrot 1 pc medium
Bulgarian pepper 3 pcs
Celery root 100 g
Ginger 4 cm
Garlic 1 clove
Parsley
Chicken bouillon 3 l
Cream portioned
Boiled chicken from broth
Soy sauce, salt, pepper taste
Potatoes 2 pcs medium

Cooking method

  • Wash and peel vegetables (except ginger). Cut them into small pieces and fry in olive oil for 5-6 minutes.
  • Transfer the vegetables to a saucepan with hot broth, add the potatoes, finely grated ginger (I don’t rub the ginger, but I cut it first into thin strips, then into small cubes), and cook until the vegetables are soft.
  • Strain the broth. Problend vegetables with a small amount of broth until puree. Put the vegetable puree in a saucepan, pour over the broth, pour in soy sauce, salt, pepper, add finely chopped garlic, taste, bring to your taste and cook for a few more minutes (I added another pinch of turmeric).
  • Before serving, garnish with finely chopped parsley and 2-3 tablespoons of cream (I first put chopped chicken in the plates).
  • PS I, to put it mildly, am not a fan of pumpkin ... If it were my will - I would put it all into baking. But pumpkins are usually big ... Therefore, having stumbled upon this recipe, and having a pumpkin available, I cooked this Japanese soup, being sure that no one would eat it ... And as a result, the soup turned out to be delicious ... so that!!!
