Mediterranean style roll

Ingredients

flour 450 g
powdered milk 50 g
fresh yeast 12 g
water 160 ml
egg (large) 1 PC
salt 8 g
sugar 2 h l
butter 35 g
thick yogurt 1 tbsp
fresh spinach 300 g
basil (green) 2 bundles
garlic 2-3 cloves
cream cheese "Philadelphia" 100 g
Parmesan 100 g

Cooking method

  • 1. Dough: dissolve 2 g of yeast in 100 ml of water, add 100 g of flour, stir and refrigerate overnight.

  • 2. Dough: grind 10 g of yeast with 2 teaspoons of sugar and leave for 5 minutes.
  • Add the remaining flour, yeast, egg, yogurt and milk powder to the dough, pour in 60 ml of water and start kneading at medium speed. I mix with a mixer for 10 minutes. Add melted butter and salt in the middle of the batch. After kneading, let the dough rest for 10 minutes.

  • 3. Divide the dough into two equal parts, roll out 0.5 cm thick. Distribute the filling evenly, roll tightly into rolls. Pinch edges tightly and roll slightly. Leave for proofing for 1-1.15 minutes.

  • 4. Before baking, grease the rolls, make long cuts 1 cm deep and bake for the first 10 minutes at 210 degrees, then lower the temperature to 170 and bring until tender (about 25 minutes).

  • 5. Filling: blanch spinach in boiling water for a couple of minutes, put in a colander and squeeze well. Cut all the greens as small as possible, pass the garlic through a press. Grate Parmesan and combine all ingredients.

The dough in this roll is very tender. Thanks to the cut, the middle is baked well. The aroma during baking is simply magical.
