Ingredients

Lemon Raspberry Kurd:
raspberries (grind in a blender and rub through a sieve so that there are no seeds) 1 glass

odorless vegetable oil 100 ml.

cream:
cream 35% 250 gr.

Cooking method

  • Lemon Raspberry Kurd:

  • heat the lemon-raspberry mixture almost to a boil and in a very thin stream, stirring constantly, introduce into the egg mixture.
  • put on a very slow heat (otherwise the eggs will cook) and cook, stirring constantly, until it is completely thickened.
  • add butter to the finished cream and cool completely.
  • jelly:
  • heat water and add syrup and agar-agar to it, stir well, cook for 2 minutes from the beginning of the boil
  • pour into a container with a large area so that a layer of no more than 4-5 mm is obtained.
  • let it harden well at room temperature.
  • biscuit:
  • stir coffee and cocoa in hot water until smooth and smooth, cool.
  • mix all bulk products in a large bowl (flour - pre-sifted, sugar, salt, baking powder, soda)
  • beat the yolks, combine them with butter and a mixture of cocoa and coffee, mix well.
  • combine the free-flowing mixture with the chocolate-butter mass, mix well.
  • beat the whites with 35 gr. sugar to steady peaks.
  • add 1/4 of the proteins to the chocolate mass and stir with a spatula from the bottom up by folding.
  • add the rest of the proteins and mix in the same way.
  • pour the biscuit mass into a mold and bake in a preheated oven at 160about From 40-50 min. check with a wooden toothpick, it must be dry.
  • cool the finished biscuit and release it from the mold.
  • cream:
  • whip cream with sugar. powder until firm peaks, add chocolate and stir with a spatula.
  • assembly:
  • cut the well-cooled sponge cake horizontally into 2 parts.
  • grease both halves with cream of cream, on the bottom of the biscuit on top of the cream of cream, apply lemon-raspberry Kurd (it takes a little more than half of the cooked norm, the rest of the Kurd can be stored in the refrigerator in a closed container)
  • cover with the other half of the biscuit and grease the sides and top with a creamy cream, let harden slightly.
  • decorate the cake with small jelly cubes and roses.

I did make a small change and I actually ended up not with Ruby, but perhaps Diamond (forgive my immodesty). There was just a bottle of champagne that was started and I was thinking where to put it. As a result, I made jelly from it for decoration. Everything inside is according to the recipe. The combination of flavors with chocolate biscuit and raspberry kurd turned out to be just perfect.
