Canned eggplants with beans

Ingredients

Eggplants (thin, long) -10 pcs., Onions-200g, carrots (medium) - 10 pcs., Sweet Bulgarian pepper - 10 pcs., Bitter pepper - 2 pods, boiled beans - 4 cups, tomato juice - 1l, garlic - 1 large head, vegetable oil -1.5 cups (for roasting vegetables), vinegar - 2-3 tbsp. l., salt and sugar-1 tbsp. spoon.

Cooking method

  • Cut the eggplants into cubes and fry. Saute the onions and carrots until golden brown. Mix all. Add salt, sugar and vinegar. Mix well. Pour over tomato juice, simmer for 15 minutes.
  • Put sweet and hot peppers and beans, cut into strips, and boiled until half cooked into the mixture. Cook for another 30 minutes. 5 minutes before the end of cooking, add grated garlic to the mixture. Put in sterile jars. Sterilize for 15 minutes. Roll up the lids.
