Ingredients

pitted dates 227g (1 glass)
butter, room T 113g (0.5 cups)
soda 1h l.
boiling water 240ml (1 glass)
flour, sift 130g
baking powder 1h l.
egg 73g (1pc large)
sugar 100g (0.5 cups)
vanillin
walnuts or pecans 100g (1 glass)

Cooking method

  • cut the dates into 3-4 pieces, put in a large bowl, add butter and baking soda. pour boiling water over. stir until the oil dissolves, set aside to cool completely.
  • coarsely chop the nuts.
  • preheat the oven to 200C. grease a square shape with a side of 23cm, or a round one with a diameter of 26cm
  • sift flour and baking powder together. in a small bowl, mix together the egg, sugar and vanillin until smooth, do not beat.
  • pour the egg mixture into the cooled date mixture, stir. pour flour, mix. pour out the nuts, mix. pour the dough into a mold, shake from side to side to flatten the surface.
  • bake for 25-30 minutes, until browned well. check the center - should spring.
  • leave in the form for 5-10 minutes, then transfer to a wire rack, cool. sprinkle with icing sugar or caramel icing.
  • Caramel glaze
  • cream 35% - 1/3 cup (77g)
  • oil - 85g
  • granulated sugar - 2 tbsp. l.
  • powdered sugar - 2 cups (320g)
  • vanillin
  • in a small saucepan, heat the cream and butter until the butter melts. leave on low heat.
  • Heat a heavy cast iron skillet with a diameter of 24 cm over medium heat, add granulated sugar and caramelize, stirring occasionally, until it turns thick brown.
  • pour cream and butter into a frying pan with caramel, everything at once. the mixture will foam up a lot. stir until the caramel is dispersed and the mass is smooth.
  • Put in a bowl, add all the icing sugar, vanillin at once and beat until smooth. use immediately. pour over the cake and smooth with a spatula.
