Ingredients

pork knuckle 1 PC
Marinade:
water 1.5-2 l
salt 1.5 tbsp
mixture of five peppers 1 tsp
dry juniper berries 1 tsp
thyme 2-3 twigs
Garnish:
red onion 2 pcs
shallot 200 g
large apples 2 pcs
butter 1 tbsp
Brown sugar 1-2 h l
balsamic vinegar 1 tsp
apple cider 350 ml
Calvados 100 ml + 2 tbsp
honey 1 tbsp

Cooking method

  • 1. Boil water with spices, cool. Pour the shank with marinade and refrigerate for at least 12 hours. It is convenient to do it in the evening and leave it overnight.
  • 2. Cut the red onions and apples into half rings about 1 cm thick and fry one by one over high heat in butter. Lightly sprinkle with brown sugar during frying. Fry the shallots in the same way, but with the addition of balsaic vinegar. Put everything on the bottom of the duck. Put the shank on top, pour in the cider and 30 ml of Calvados (drain the marinade, it is no longer needed).

  • 3. Put in an oven preheated to 170 degrees and simmer under a lid for 2-3 hours. The time depends on the size of the shank and on the degree of tenderness of the meat that you want to get). 30 minutes before the end of cooking and brush the shank with a mixture of honey and the remaining calvados.

The dish is absolutely self-sufficient: the aroma is simply flushed, and the meat is very juicy and tender.
