Ingredients

DOUGH:
Flour in. from. 605 g
Water 332 g
Salt 10 g
Sugar 39 g
Table margarine (vegetable oil) 20 g
Dry instant yeast 7 g
(2 tsp.)
Filling:
Meat 650 g
Bulb onions 150 g
Salt 10 g
Black pepper generously
Ice water 80 g

Cooking method

  • Knead the dough from everything except margarine, take warm water 36-37C. knead for 5-7 minutes, then add softened margarine and knead until it lags behind the sides of the bowl. the dough is sticky. cover with foil, ferment for 3-4 hours at T 35-40C. knead 2-3 times during fermentation.
  • prepare the filling - pass the meat through a meat grinder with a regular grill, add finely chopped onion (I skipped it with the meat in the meat grinder), salt, pepper, ice water and knead.
  • Divide the dough into 55g pieces - 18 pieces. when cutting, grease hands and equipment with vegetable oil (you cannot sprinkle with flour, it will burn in fat when frying). roll into balls, spread at a distance of 5 cm from each other on a table greased with vegetable oil, leave for 5 minutes. then turn the balls upside down and stretch them with your fingers into small cakes. Put the filling (44g each), pinch, let the proofer.
  • Heat vegetable oil in a frying pan with high sides to T = 180-190C. fry for 7 minutes - 2 minutes on the pinched side, 2 on the smooth side, 2 more on the pinned side and 1 on the smooth side. put on paper or waffle towels, cover with a towel to soften. mmmm, enjoy)
