Khachapuri Georgian (Telavi)

Ingredients

kefir (yogurt, fermented baked milk, yogurt, etc.) 250 ml
flour 400 g
oil drain. or margarine 100 g
egg 1 PC
granulated sugar 1 tbsp. l.
salt 1 tsp
cheese like suluguni or any other 300 g
egg in the filling 1 PC

Cooking method

  • Dough for Georgian khachapuri (Telavi)
  • Melt butter (or margarine) or cut into pieces.
  • We put all the components in the HP, put them on the "pelmeni" mode.
  • Then you take it out - if it's watery, you can add flour.
  • Divide a teaspoon of baking soda into thirds
  • Then roll the dough into a layer, about 3 cm in height, sprinkle with 1 part of soda on top, roll the layer, roll it out again, sprinkle it with soda again - in short, you need to do this operation three times.
  • Let the dough rest in a warm place for at least 2 hours.
  • Then, if you didn't use everything right away, wrap it in plastic and put it in the refrigerator.
  • Let it warm up a little before the next fry.
  • Then we take pieces the size of a medium orange, roll out, in the middle, the grated cheese filling with a raw egg. We fold it in an envelope, roll it again with a rolling pin. Fry in a pan - first under the lid; turned over - fry without a lid over medium heat.

Well, firstly, this is a recipe - it was given by D. Gochelashvili from the city of Telavi, Georgian SSR. I trust this lady. That was a long time ago!
Secondly, the dough processed in this way gives better flakiness - khachapuri are very flaky.
