Ingredients

cake
biscuit crumbs 1 glass (240ml)
sugar 2 tbsp. l.
cinnamon 1/2 tsp
butter, melt 57g

eggs, separate yolk and white 220g (4pcs.)
milk 180g
canned pineapple in chunks, with syrup together 1 stack. (230g)
soft cottage cheese, grind 680g
zest of 1 large lemon, finely grate
lemon juice 3 tbsp. l.
cream 33-35% 230g

sour cream 30% 230g
almond petals, fry 3 tbsp. l.

Cooking method

  • mix the ingredients for the crust thoroughly and put them in a detachable dish 23 cm in diameter, 7.5 cm in height (important! the dessert is high). press well to the bottom of the mold. cool in the refrigerator or freezer, or bake in the oven for 8 minutes at 190C. baking is not necessary, but the baked crust is tastier and stronger.

  • mix gelatin with hot milk, stir until almost completely dissolved. (the gelatin smells, do not worry, the smell will disappear when finished.) Add sugar and salt, stir.
  • in a small bowl, stir 3 yolks until smooth, then gradually stir in the milk mixture. add pineapple and mix well.
  • in a water bath over medium heat, cook for 10 minutes, stirring almost continuously, until the mixture thickens (it looks like a jelly). pour into a large bowl to cool.
  • Break the curd into a cream with a blender, or squeeze through a sieve, should be completely smooth. mix lemon zest and juice. when the pineapple mixture has cooled, stir in the cottage cheese and lemon.
  • beat the cream until soft peaks. fold into the curd-pineapple mass. beat the whites until soft peaks, not dry. fold the whipped egg whites into the curd-pineapple mass. pour the mixture onto the cake pan. rotate the mold slightly to level the surface. put in the refrigerator for 5-6 hours, preferably overnight. with a small sharp knife, circle along the walls of the form to free and remove.

  • Stir the sour cream slightly with a fork so that you can spread it. apply evenly to the surface of the dessert with a metal spatula.
  • fry almond petals in the oven until golden brown. Break the almonds roughly (I couldn't) and sprinkle the surface evenly. put in the refrigerator. not to give to guests. because everyone will eat and ask for more!
  • if you still decide to treat someone - pour boiling water into a cup, lower the knife there to heat it up, wipe it dry and cut it with a hot dry knife. very gentle, does not wrinkle.

I was not going to exhibit this dessert - personally to me it is not so direct that I like it super well, gentle, well, it melts in your mouth, like a cloud ... well, so we didn't eat tender desserts ?? gave the household a try .. and then .. an epiphany came .... that's it! without exception! my family members eat it by both cheeks and say that they are soooo delicious! and that's it! without exception! asking for supplements! in general, this is sooooo strange, because two of our family always like new desserts, and two others don't like it .. in this case, this is "not my" dessert, but everyone else ... as if the year of sweet ate, honestly .. so I can't deprive your household of such a dessert, right?
