Ingredients

Dough:
Warm water 125g.
Fresh yeast 10g.
Flour 1 grade 225g.
Dough:
Opara
Warm water 150g.
Salt 7d.
Sugar 10g.
Milk 2st. l.
Wheat flour, premium 275g.
Vegetable oil 2h l.

Cooking method

  • Cooking dough. Dissolve the yeast in water, leave for 10 minutes to let the yeast bloom. Pour HP into the bucket. Flour on top. Start mixing any program for 10-15 minutes. You should get a bun. Turn off HP and leave for 3 hours.
  • Over time, dissolve salt, sugar, milk in water. Pour on the dough, shake hands. Although, I think it would be better to beat with a mixer until smooth and then pour into the HP. Flour on top. Dough mode. Add oil after 10 minutes. After the end of the kneading, turn off the HP, take out the dough, form a ball (if necessary, dust the table with flour), put in a container slightly greased with vegetable oil and put in a warm place for 1 hour. I tested it in MV Brand on the Dough mode.
  • Next, knead the dough, form a round loaf and place with the seam down on a baking sheet covered with paper.
  • Cover with a towel and put in a warm place for 1 hour. I defrosted in the oven with the light on and a mug of boiling water. ...
  • 20 minutes before the appointed time, turn on the oven at 200C, put a wide container with poured water on the bottom, with a layer of about two fingers.
  • Before baking, cut about half of the bread's circumference with a sharp knife, stepping back from the bottom by 3/4 - we get a "visor" characteristic of the cake. My cut did not work out, it was deep enough, so the visor is not pronounced.
  • Lubricate the bread with a brush with a solution - 1 tbsp. l. water, salt on the tip of a knife and the same amount of soda. Sprinkle immediately with a thin layer of flour - powder.
  • Bake in the oven without changing the temperature and without removing the water for 40-45 minutes. If desired, grease the finished bread with butter and cover with a towel.

Palyanitsa Ukrainian ( 🔗) is a round hearth bread with a cut on 3/4 of a circle and a raised, clearly defined visor, the surface is slightly mealy. Palyanitsa weight 1.0 kg. The recipe establishes the following ratio of parts of raw materials by weight: Premium grade 1 grade 2 grade Wheat flour 100.0 100.0 100.0 Perezovanny yeast 1.0 2.0 2.0 Salt 1.3 1.3 1.3 Vegetable oil 0 .15 0.15 0.15

Proofing time 25-30 minutes.

And why, by the way, put it in a bowl and look for a warm place in the kitchen, if in the bread maker on this program it is defrosted after kneading for just an hour and 10 minutes, and the temperature is specially for proving that the doctor ordered!
