Ingredients

white bread flour 2.5 h
whole grain flour 0.5 h + 1 tbsp. l.
bran 2 tbsp. l.
granular yeast 1. st. l.
vegetable oil 2 tbsp. l.
sugar 1 tbsp. l.
Salt 1.5 tsp

Cooking method

  • Designed for a 680g loaf.
  • 1) flour - 2.5 scoops of plain white flour
  • +0.5 mph full rye flour (not peeled) + 1 tbsp. not measuring spoon with a decent slide
  • I must sift all the flour!
  • 2) add two tbsp to the sifted flour. spoons with a small slide of dry bran (I managed to buy it somewhere with flax seed)
  • 3) I also add 1 tbsp. a measuring spoon of granular yeast (our Israeli invention),
  • I mix everything well and set it aside.
  • 4) pour 2 ct into the mold. not measuring spoons of vegetable oil - so that it is lubricated inside the blade and the cylinder on which the blade is put on (less friction)
  • 5) add Art. measuring spoon of sugar +1.5 measuring spoon of salt
  • 6) add 1.1 / 8-dimensional cup of warm water (heat for 1 minute in a microgal, less in summer)
  • 7) I carefully pour the flour with all the additives into the mold and bake on the 1st program.
  • I knead the dough twice (I’m not too lazy to come up, but it’s better to knead the dough)

I sometimes add instead of 1 st. spoons of rye flour - buckwheat almost without a slide, and if only white flour - add 2 tbsp. tablespoons of white flour with a decent slide. The gingerbread man should not knock when kneading - either add a spoonful of flour or a spoonful of water. I put sugar and salt to my taste. Instead of bran, you can add small rolled oats, but then it must be poured into water in the form, and only then sift the flour (just the rolled oats will infuse).
BUT! I bake bread right away! It will not work with delayed time, it needs to be redone.

Granular yeast is in the super in the same place as diced (raw) as milk. Only they are in sachets: the company is שמרית. And the yeast itself is שמרים טריים לאפים. I tried to bake bread with bread flour, I didn't like it - the roof is a failure.

At one time I was very enthusiastic looking for everything about rye bread. If I am not mistaken, the highest content of rye flour in bread is 50%. And not every bread maker will pull - it will bake, while you also have to tint it. I suffered and now when I want to buy rye bread in a Russian bakery, the bread is very good.
Start with simple bread, bring it to mind, then on this experience it will be easier to refine other recipes.

It won't help. If there is a lot of water, the crumb will remain wet.
