Peasant bread in a bread maker

Ingredients

Loaf 750g 1000g
Water 305ml 405ml
Sunflower oil 0.5 st. l. 1 st. l.
Salt 1.5h l. 2h l.
Sugar 1 st. l. 1.5 st. l.
Powdered milk 2st. l. 2.5 st. l.
Wheat flour (premium or 1 grade) 360gr. 495gr.
Rye flour 120g. 165gr.
Dry yeast 1.5h l. 2h l.

Cooking method

  • Put the ingredients in the HP bucket according to the instructions.
  • If there is no milk powder, you can use regular milk + water in the following proportions:
  • for 750 gr: water 205ml + milk 100ml
  • for 1000g: water 280ml + milk 125ml
  • For 5-10 minutes before baking, you can make cuts on the "roof" of the bread with a sharp knife, in my case in the form of a pigtail.
  • Bake on Whole Grain or Basic for 3 hours 30 minutes.

Note

This is the favorite bread in our family. It is neither white nor very gray. The ratio of wheat to rye flour 3: 1 is my daughter's favorite.
You can also add bran to such bread: wheat or rye, to taste.

P.S. When baked with bran (3 tablespoons), added 15-20 ml. water. The gingerbread man was somehow dense. I am a beginner baker, so I don’t know if it should be this way or not, but the bread WORKED !!!!

Irina, you can replace a certain amount of wheat flour with the same amount of bran. But you will have to look after the bun, you may need to add water, a spoon or two.

however, the day before yesterday I got it tasty, but ugly))) violated the baking technology: I put everything as per the recipe, went for a walk, after 2.5 hours I come back, but there is no electricity in the house, and the bun has risen above the bucket. I crumpled it again, waited for the light to come on and the bun would rise again. While the light was given, it was already above the bucket again, stood. But I didn’t have time to crumple it again and wait until it came up, I had to turn it on for baking. The roof, of course, fell immediately. But the main thing is that the taste did not suffer from this !!!!

If the oven is gas, it would be possible to rearrange the bread to be baked directly into the preheated oven at 180 * C, and directly in a bucket from the bread machine. You don't need to do anything with the dough, just put it in the oven.
