Brownie with mascarpone and ganache

Ingredients

eggs 3 pcs
butter 200 g (I had a creamy margarine)
mascarpone 100 g
sugar 1 glass
bitter chocolate 100 g
flour 0.5 cups
cocoa 0.5 cups
vanillin on the tip of a knife
salt pinch
for ganache:
cream 33-35% (I had 15% sour cream) 110 ml
bitter chocolate 100 g
butter 35 g
powdered sugar 50 g

Cooking method

  • Prepare brownie:
  • Melt butter or margarine over low heat.
  • 🔗
  • Turn off the stove, add broken bitter chocolate to the butter, mix well after half a minute.
  • 🔗
  • Add sugar, vanillin, a small pinch of salt, mix again.
  • 🔗
  • Add sifted cocoa and stir again.
  • 🔗
  • Add eggs one at a time, stirring the dough each time.
  • 🔗
  • Add the mascarpone, stir.
  • 🔗
  • Then add the sifted flour and mix the dough until smooth. The result should be a smooth, elastic dough.

  • Pour the dough into an oiled multicooker bowl (I also covered the bottom with oiled parchment paper), smooth the surface and bake for 50 minutes on the "Bake" mode. After the signal, you can keep it on heating for another 10 minutes or in the "Crust" mode.

  • Turn the finished crust out of the bowl onto the tray of a double boiler, cool and cover with ganache.

  • Decorate as desired (I poured a thin layer of cream over the still warm ganache, covered the edges with airy chocolate balls, put a few canned cherries in the center), although this is not necessary.

  • Chocolate ganache:
  • Bring the cream with powdered sugar to a boil (but do not boil) over low heat.
  • 🔗
  • Remove from heat, add broken dark chocolate, leave for a couple of minutes. Then stir until smooth. Add softened butter and mix well again.
