Ingredients

Dough:

Flour 30g.
Milk 125g.

Cream:
Milk 250g.
Sugar 100g.
Wheat flour 25g.

Cooking method

  • Prepare dough - mix sugar, yeast and flour, dilute with warm milk and put in a warm place for 30 minutes until bubbles appear.
  • At this time, cook the cream - mix flour with sugar, pour milk, stir and put on minimum heat. While stirring constantly, wait until the cream thickens. Turn off, cool. It didn't thicken even after 15 minutes, so I added some starch. And all the same, the cream turned out to be watery, therefore, to make the cream thicker, it is necessary to reduce the amount of milk to 150g.
  • Prepare the dough: pour the dough, warm milk, softened butter, an egg into a bucket of HP. Top with flour, salt, sugar. Dough mode. The gingerbread man is soft, not sticky. Add flour if necessary. After the end of the kneading, turn off the HP, take out the dough, form a ball and place in a suitable container with a volume of at least 5 liters. Cover with foil, put in a warm place until doubled. I fermented in MV Brand, dough mode for 1 hour.
  • Knead the matched dough, roll it into a rectangle, which is mentally divided into three parts along the long side. Put the cream on the central part (pour it out). Close with left side, top right side.
  • Cut into strips about 2 cm thick. I got 10 pieces. Roll each strip with a spiral 2 times. The cream will flow out, it's okay. The finished spiral must be dipped in the cream on all sides, and the leftovers must be collected, then poured onto the buns on top.
  • Place the buns on a lined baking sheet. ATTENTION: You must be sure of the quality of your paper, because during the proofing and baking process, the cream will flow out and stick to the paper, if the paper is of poor quality, you will eat rolls with it. : -X Top with the rest of the cream. Leave on for 30 minutes.
  • Brush with egg before baking.
  • Bake in an oven preheated to 180C for about 25 minutes until golden brown.
  • Carefully remove the paper from the still hot rolls.
