Ingredients

for jelly:
fresh squeezed orange juice (strain) 400 ml.
gelatin 8 gr.
olive oil 2 tbsp. l.
vodka 40 ml.
salt 1/4 tsp
sprigs of fresh rosemary
for shrimp:
large shrimps (peel, leave the tails, save the shell) 6 pcs
olive oil 2 tbsp. l.
garlic (press) 1/2 clove
grated fresh ginger 1/2 tsp
ground coriander 1/2 tsp
ground cardamom 1/4 tsp
salt pepper
for serving:
1 small avocado (peeled and cut into half rings. b in lemon)
olives
caviar

Cooking method

  • I wanted it to be not time consuming, but beautiful and festive, just in every respect, but not beaten, and most importantly delicious! the result was very pleased!
  • jelly:
  • soak gelatin in a little cold water
  • heat half of the juice to almost a boil and dissolve the squeezed gelatin in it. add the remaining juice, vodka, oil and salt, stir well.
  • pour the jelly into glasses and place the sprigs of rosemary in them, refrigerate until the jelly hardens completely.
  • shrimp:
  • in heated oil quickly fry the shell, garlic, ginger, coriander and cardamom, drain.
  • fry the shrimps in strained oil, completely cool by throwing them on a paper towel to remove excess fat.
  • place the shrimp in the glass on top of the jelly and secure it with a skewer, add the avocado and olive, and decorate with caviar.
  • Happy New Year!!!
