Ingredients

Wheat flour 300g.
Oat flour 80g.
Water 235g.
Ghee butter 15g.
Fresh yeast 8d.
Rye malt 1 \ 2h. l.
Sugar 2h l.
Salt 1.5h l.

Cooking method

  • Grind yeast with sugar and malt, add some water from the total volume, stir and leave to ferment for 10 minutes. Pour HP into the bucket.
  • There the rest of the water, butter at room temperature, and salt on top of the flour. Dough mode. Knead a smooth, soft, elastic dough. Add water if necessary. After the first kneading, put the dough on the table, form a ball, put in a container, greased with oil, and put in a warm place for 1 hour. I set the dough mode in MV Brand.
  • Next, knead the dough, transfer it to the table (if necessary, dust it with a little flour), form a rectangle with your hands, fold it in three. Then turn the dough 90 degrees and fold it three more times, let it rest for 5 minutes.
  • Form a dough loaf, roll in oatmeal, place on baking paper (mat), and cover with a towel. Let it come up for another 40 minutes. I put it in the oven with the light on and a mug of boiling water.
  • Sprinkle bread and oven with plenty of water before baking.
  • Bake in an oven preheated to 220C for 30-35 minutes.
  • Put the finished bread on a wire rack, cover with a towel until it cools completely.

I could not resist and decided to bake a loaf without delay. But strictly according to the recipe, I can't: I don't have oat food, I replaced it with oatmeal, ground in a blender, and since it is not whole grain, but I want usefulness, instead of 300 grams of wheat I put 200 grams of wheat, 90 grams of wheat. and 10 grams of bran. The gingerbread man turned out to be taut, but did not add water. Now it is baked, I do not know what will come of it, if it turns out to be very scary, then I will not show the photo, but if nothing, then wait tomorrow.
