Hello everyone and good mood!

Guys, I have a little problem baking gray bread.
Our stove is Gorenje BM 900 AL.

We use this recipe
We bake gray bread in the Gorenje BM 900 AL bread maker

It turns out bread is much lower than white, and besides
the roof falls like this:

We tried adding additives - added gluten 22 grams and malt 22 grams

and we took equal parts 280 grams of flour, and 360 grams of water, 14 grams of live yeast, 1.5 tea sugar,
and sugar 1 tablespoon with a slide, 2 tablespoons of sunflower oil.
But it turned out to be a cracked top:

Somehow we tried to add dry leaven

but still the roof is collapsed. We tried to reduce the amount of water to 320 or yeast to 11 grams - it does not help.

Please advise what can be corrected in the recipe or in something else that bake gray bread with a roof that has not fallen through. Thank you in advance.

You obviously have little water, I take 410-420 ml for 550 g, depending on the moisture content of the flour, take 10 g of yeast, the rest is normal with you. The roof collapses when the bread stands still during the rise, start baking a little earlier, when the dough has increased by 2 times

to start baking earlier, a manual program must be programmed. And I need a recipe for the first program and specifically for Gorenje BM 900 AL, and without special cunning additives (today there is a store where they are sold, but tomorrow it may close), that is, rye and wheat flour, yeast, sugar, salt, water and oil , well, maximum malt yet. So you need proven proportions for this particular bread machine for the 1st program. The recipes found by the search either not for this bread maker or did not work out. Please, who bakes black or gray bread on such an oven - please share the recipe or tips
