Cooking method

  • I have long wanted to make these rolls, but I still could not buy poppy seeds for sprinkling. On New Year's Eve, I found myself far from Moscow, and quite by chance in a local store, among other groceries, I saw him - poppy seeds! The original recipe for buns is very, very simple (as well as most of Bertinier's recipes), but I want to make it not only beautifully, but also as delicious as possible! I really like to use bigu - daily fermented dough. The Italian way of baking bread, in my opinion, is ideal for those who cannot deal with bread all day.
  • So, let's make a bigo!
  • 1. Mix both types of flour, grind the yeast in flour with your hands until fine crumbs. Add water and knead for two to three minutes. You should have a pretty tough dough.
  • 2. Form a ball out of the dough and transfer it to a bowl. We cover the bowl with a towel (I have been covering it with plastic lately and, for the sake of faith, I have tied it all up with an elastic band) and put the bowl in a warm place for a day.
  • Kneading and forming rolls
  • 3. Transfer the bigu into a mixing bowl, add flour. We grind the bigu in flour with our hands until fine crumbs. Pound yeast in flour in the same way. Add salt and water. We knead the dough. We spread it on the table and knead until the dough is easy to move away from the table and hands.
  • 4. Form a ball, put it in a bowl, cover with a towel and put in a warm place for 1 hour.
  • 5. Put the dough on the table powdered with flour. Divide the dough into 12 equal parts. Roll up a ball from each part. Cover the balls with a towel and leave them on the table for 5 minutes
  • 6. Form a loaf - take the ball in hand, dip it halfway into water (pour it into a deep plate beforehand) and then into a plate with poppy seeds. We put the ball on the table (with the poppy to the top). Slightly press the ball with your hand (at the same time press the poppy into the dough). We take a clean credit card. with the short side we make one longitudinal cut in the center of the ball (the cut should not reach the edges). Then we make two more cuts. You should get the letter X cut in half (three intersecting cuts). We take the blank in hand. Carefully straighten and turn the loaf inside out. The corners made by the cuts should now protrude outward. We put the loaf on a baking sheet. We repeat the procedure with the remaining balls.
  • 7. Cover the baking sheet with the rolls with a towel and put everything in a warm place for 45 minutes or until the rolls double in size.
  • 8. Quickly put the baking sheet in an oven preheated to 250C and sprinkle it with water. Bake for 10-15 minutes. Cool the rolls on the wire rack.

Recently, I really like dough with high moisture content (80%). If you are not used to such a test, and it is harder to work with it, add a little less water in the second stage.
