Ingredients

Rice 800 g
Meat (chicken) 600 g
Lavash thin 2-3 sheets
Saffron
Turmeric
Onion 1 large onion
Salt
Ghee butter 100 g
Raisins, chestnuts, cherry plums (optional) 150 gr.

Cooking method

  • Boil rice until half cooked in salted water
  • Shah-pilaf
  • While the rice is cooking, fry the onions and meat
  • Shah-pilaf
  • Grease a baking dish and line with pita bread, so that the sheets overlap and the edges hang down
  • Shah-pilaf
  • Rice, put on a drushlag so that all the water is glass, lay out in layers - rice, meat, rice
  • Shah-pilaf
  • Sprinkle the rice with melted butter.
  • Sprinkle the top layer of rice with saffron and / or turmeric Shah-pilaf
  • Saffron can be poured with boiling water (50 ml) in advance and poured over the rice layers.
  • Wrap the hanging ends, grease with oil
  • Shah-pilaf
  • Bake in the oven at 180C for about 1 hour, until golden brown.
  • When the pilaf is baked, turn over onto a plate
  • Shah-pilaf
  • Cut like cake

Note

I spied this pilaf in an Azerbaijani restaurant, caught fire, made it. Very tasty, not greasy at all.
There are 2 options, you can do it without meat, and serve meat stewed with chestnuts, raisins and cherry plum separately. You can do it together. I have a one and a half version, all together, but without chestnuts (not found in stores) and raisins (and hell knows why).

I also made it in the dough, I got a similar recipe somewhere. Called "Keg of pilaf", it is quite a festive dish (mushrooms are also added there).
