Ginger-lemon bread

Ingredients

Wheat flour 250g
Milk 160ml
Eggs 1 PC
Butter 12g
Sugar 40g
Salt 1/2 tsp
Dry yeast 1 tsp
Candied pineapple 50g
Lemon zest 2 tsp
Ground ginger 1 tsp

Cooking method

  • Load all ingredients, except candied fruits, zest and ginger, in the order indicated in the instructions for the HP.
  • Prepare the dough using the appropriate program. For me - this is the "dough" program (HP Bork-500).
  • After 1 hour and 30 minutes, remove the finished dough from the HP, add ginger, finely chopped candied pineapple peel and lemon zest.
  • Place in a baking dish and bake in an oven preheated to 170 * for 50-60 minutes.
  • And Bon Appetit! We really liked the bread, besides it is small in size. In a round shape, it can become a cake.

Time for preparing:

2 hours 30 minutes

And specify the temperature for baking bread - 170 * C, did I understand correctly? Isn't it too little for bread?

I baked almost immediately after adding additives (ginger, lemon, candied fruit). Yes temperature 170 *, in convection mode.

Your bread will be much nicer and tastier if you knead the dough with dried fruits after a cold oven, then put the dough in a mold and let it stand until it doubles and only then put the mold in the oven heated to 180-190 * C.

And so, you got an undiluted dough, and immediately into the oven - so it gave a jump from the hot oven!

Your dough is WHEAT, and it requires two proofings

But it seems to me that if you increase the amount of butter, the dough will become more crumbly, closer to muffin. Replacing the yeast shouldn't affect the flavor too much. And, of course, I paid attention to Tatyana's remarks! Also, why not bake it completely in HP? Have not tried?
