Turkish soup with bulgur

Ingredients

Ready meat broth 2-2.5 liters (with portions of meat)
Lentils red 1 measuring cup
Bulgur 1/2 measuring cup
Dried tomatoes 6-8 rings
Fresh potatoes 1-2 pcs. middle
Fresh greens (dried) 1-2 tbsp. l. chopped
Vegetable frying:
bulb onions 1/2 pcs.
fresh carrots 1 small
Sweet pepper 1/2 pcs. colored (used from the freezer)
red, ripe tomatoes 1-2 pcs. medium (used from the freezer)
vegetable oil 0.5 tbsp. l. for frying
salt, spices taste

Cooking method

  • Cooking meat broth. I used veal brisket for the broth, cut into portions.
  • We make vegetable frying in a separate frying pan. We heat the vegetable oil, put the onion in pieces, carrots on a coarse grater, sweet pepper in pieces, red tomatoes in pieces, spices, a drop of salt, and simmer the vegetables until the liquid evaporates so that the vegetables begin to fry a little.
  • Now you need to combine meat broth and vegetable frying, with cereals, potatoes. I do it in the opposite way - first I combine all the ingredients, and then I fill it with liquid broth to the desired thickness of the soup, then you can accurately guess the amount of all the ingredients. If you do the opposite, then as a rule, the soup is liquid, or it turns out to be a lot.
  • So, in a saucepan I put vegetable dressing (frying), lentils, bulgur, dried tomatoes (cut into small pieces), potatoes in large pieces, and set to cook until cereals and potatoes are ready. Potatoes and cereals are usually ready at the same time.
  • At the end of cooking, add greens, taste, salt, broth thickness - and bring to readiness.
  • We serve hot soup to the table, try it - delicious!

    I read the ingredients: lentils, bulgur, dried tomatoes, pieces of celery. Then she herself picked up the amount of lentils and bulgur, dried tomatoes and celery herself in the summer, frying can also be done by herself ... well, the name "Turkish Soup" has survived.

Its history goes back more than 4 thousand years: this is almost the first way to process wheat grain. And some industries still use this millennial technology.

Usually, cereals are prepared as follows: wheat grains are treated with boiling water, dried and crushed to the desired caliber. But there are complications in this process: the grains can be germinated and burned over an open fire - then the cereal has a pleasant "smoky-smoked" aroma. Another option: bulgur is made from green, not yet ripe wheat grains.

Bulgur is popular not only because of its nutritional properties - it contains a record number of nutrients and very few carbohydrates, because it is prepared exclusively from durum wheat. Strong bulgur grains are indigestible and have a mild nutty flavor with a slight hint of haze. Cooking bulgur is as easy as shelling pears: in a saucepan you need to heat a little vegetable oil, lightly fry the grains and pour two parts of water. Cover and simmer for 15-20 minutes. Serve with any vegetables, mushrooms or meat
