Maina * + Roll with salmon

Ingredients

ready-made puff pastry 700 gr (2 sheets)
or for sour cream dough:
butter 200 gr.
sour cream 20% 200 gr.
some salt
flour 400 - 450 gr.
yolk + a few drops of ice water
Filling for fish roll:
salmon fillet (trout) 500 gr.
medium finely chopped onion 1
red bell pepper (cut into strips) 250 gr.
salt. pepper to taste
lemon 1/2
Maina filling:
chicken liver 500 gr.
medium finely chopped onion 1
medium carrots (cut into circles) 1
salt pepper
homemade noodles (boil and season with butter) 200 gr.

Cooking method

  • * Maina - a dish of Jewish cuisine, made from sour cream or puff pastry. The meat component of the maina filling can be any of your favorite meat (except pork).
  • if we cook from sour cream dough:
  • Grate the butter on a coarse grater, mix with sour cream and salt, add flour and knead the dough, divide into 2 parts, roll into balls, wrap with cling film and refrigerate for at least 4 hours, or better for a day.
  • Filling for fish pie:
  • fish fillet, grate with lemon, salt and pepper, place in the refrigerator for 1 hour.
  • Maina filling:
  • Place the liver, onions and carrots in a saucepan with heated oil.
  • Fry until golden brown, add 200 ml of water, cover and simmer for 15-20 minutes. remove the cover and allow the liquid to evaporate. Remove from heat and cool, add salt and pepper, grind in a blender or meat grinder.
  • Assembly:
  • Roll out the dough 0.5 cm thick, giving it the shape of a rectangle, step back 4 cm from the longer edge and line the liver filling with a groove, line the noodles next to it, bend the short edges of the rectangle inward.
  • Wrap the maina in a roll from the side. where we indent. for convenience, I place the rolled dough on baking paper and wrap the maina with it and use it to move it onto a baking sheet covered with another sheet of baking paper.
  • We do the same operation with the second piece of dough, only line the salmon, and on top of it pepper.
  • Cut the finished rolls slightly with a sharp knife, I use a knife to cut pizza, into portions and grease with yolk.
  • Bake in preheated oven at 180 "for 30 minutes until golden brown and serve in portions.
