Italian rosemary cupcake

Ingredients

Wheat flour 1 1/2 cups
Salt pinch
Sugar 3/4 cup
Olive oil
plus a little for smearing
(extra-virgin)
1 1/2 cups
Chopped Rosemary Needles 1 1/2 tbsp. l.
(2 - 2 1/2 twigs)
baking powder 1 tbsp. l.

Cooking method

  • 1. Preheat oven to 325F / 160 C. Grease a 23 * 14cm rectangular muffin tin with oil.
  • 2. Sift flour and baking powder into a small cup, combine with salt.
  • 3. Beat eggs with a mixer for 1 minute, add sugar and continue beating for 10-12 minutes, the mass should become very fluffy, thick and light. At a low mixer speed, pour a thin stream of olive oil into the egg mixture. Using a rubber spatula, carefully fold in the rosemary needles.
  • 4. While stirring the dough with a spatula, gradually add the flour mixture to the egg. Pour the dough into the prepared mold.
  • 5. Bake the cake for 45-50 minutes until golden brown. Select muffin from oven, let stand for 10 minutes in pan and then remove from pan and cool completely.

  • I baked a cupcake in MV. The "baking" mode 65 minutes (this was more than enough). 10 minutes the cake stood in a closed MV, another 10 minutes with the lid open, and then turned the cake over onto the steamer rack and left to cool.

A very aromatic cake, incredibly lush, but ... tart (because of the rosemary)! Although I am entirely to blame for the astringency ... The fact is that I did not have fresh rosemary, so I took dried rosemary needles and sprinkled them with all generosity, namely 1 tbsp. l. I will definitely bake it again, and more than once, but if I replace fresh rosemary with dry one, I will reduce it to about 1.5 tsp.
P.S. In its structure, the cake is very, very similar to the familiar charlotte, except perhaps without apples. [/ i]

It turned out very tasty at MV Oursson. Only you are missing eggs in the list of ingredients .. There are 4 of them in the original recipe.

I added finely chopped dark chocolate to the dough for my favorite and very classic combination of chocolate and rosemary. It turned out great !! Brilliant accompaniment to Sauternes and Passito!
