Chocolate marble mousse

Ingredients

Cream 10% 100 ml
Bitter chocolate (90%) 100 g
Eggs 4 things
Powdered sugar (or fructose) 100 g
Vanillin 1 pinch
Salt 1 pinch
Lemon acid 1 pinch

Cooking method

  • Heat the cream to a boil. Dissolve the chopped chocolate in hot cream, stir thoroughly until smooth.

  • Separate the whites from the yolks.

  • Add ~ 1/3 powdered sugar, vanillin to the yolks, beat until white;

  • Add salt and citric acid to the proteins, beat until strong foam;

  • add the remaining icing sugar in portions (until sweetness to your liking) and beat until it dissolves and the proteins acquire a gloss.

  • Add 1/3 of the whipped egg whites to the chocolate cream, stirring gently but thoroughly.
  • Chocolate marble mousse
  • Add 1/3 of the proteins again and stir gently from bottom to top, twisting the pan in a circle.
  • Chocolate marble mousse
  • Add the rest of the proteins, without kneading the mass until completely homogeneous, to give the mousse a marble effect. Let the "strands" of protein and chocolate cream remain unchanged.

  • Put the finished mousse into bowls and put in the cold for several hours or overnight.

The dish is designed for

4-5 servings (depending on the size of the bowls)

Time for preparing:

20 minutes + cooling

Note

I recommend serving the mousse with sugar-free coffee. Dessert is very pleasant to wash down with a sip of aromatic strong coffee.

I don't really like dark chocolate.

Flaxia, just try to beat it a little longer, probably you don't have enough patience. If the squirrels slide easily relative to the bowl itself, then there is more work to be done. We'll make them! And then what do they allow themselves!
Regarding the use of milk chocolate, you can of course try, but you will have to take twice as much, otherwise the taste will be barely noticeable.

Cognac is certainly better! I suggest, for those who do not like sweets, replace all the sugar in the recipe with cognac!

I am making mousse with a different recipe. No eggs or powdered sugar. It turns out porous (airy) and also very tasty.

150 gr. chocolate not less than 50% cocoa
200 ml. cream 33%
60 ml of liquor or cognac (I just pour a couple of spoons)
