Carp baked in a spicy salt crust for my beloved

Ingredients

Carp 1-1.2kg.
Protein 2 pcs.
Lemon 1 PC.
Water 3st. l.
Fresh rosemary 2branches
Bay leaf 4 things.
Black peppercorns 3st. l.
White peppercorns 1h l.
Parsley 3-4 branches
Salt 1.3kg.

Cooking method

  • It turns out that in our family everyone, if something comes to mind, there will be no peace. So my husband decided that he would cook the fish and that's it .. We urgently need to go to the store for the missing ingredients. And nothing that the night is in the yard .. So I decided that I would do a slideshow and that's it .. And nothing that will soon dawn.
  • Clean the carp, gut, rinse, dry with a napkin.
  • Crush black peppercorns in a mortar, not too finely.
  • Crumble the bay leaf.
  • Separate the whites from the yolks. Beat them lightly in a large bowl. Add black pepper, bay leaf, salt, water, rosemary leaves there. Mix.
  • Cut the lemon into thin slices.
  • Crush white pepper in a mortar. Rub the carp inside and outside with it. Put parsley and a few slices of lemon into the belly.
  • Put 1/3 of the salt on a baking sheet, level. Place lemon slices on top. Fish on them. On top of the fish again lemon.
  • Cover the fish completely with salt. Smooth with your hands. It is important that there are no gaps through which juice can flow.
  • Bake in an oven preheated to 220C for 45-50 minutes. After a while, remove the baking sheet from the oven and leave on the stove for 10 minutes.
  • Carefully cut off the salt crust. Cut into portions.
  • Do not rush with slippers. For the first time, I do so. I see errors in the text ..

I just pack fish in salt for a long time, and not only large ones. I don’t clean the fine one at all (it is removed with the salt). The fish is tender, with a spicy aroma, and tastes like a stew. Any aromatic herb can be used - thyme, for example.
