Ingredients

Draining. oil 200 g
Sugar 170 g
Flour 270 g
Yolks 3 pcs
Berries (can be frozen) 300 g
Starch 1-2 tbsp. l.
Sugar for sprinkling berries 1-3 st. l.

Cooking method

  • Baskets can be made in different ways. Closed, open with a wire rack or baskets with berries, and on top there are small meringue stars (we put them out of a pastry syringe with a nozzle). Accordingly, from here - and the number of baskets - from 12 to 18.
  • 1. Knead butter (do not melt!) With sugar and yolks. Add flour until the dough becomes plastic and does not stop sticking to your hands. Be careful not to overdo it with flour! If the dough comes out very steep, then add a few tablespoons of warm water or milk. We remove the dough for an hour in the refrigerator.
  • 2. Tear off the resulting dough piece by piece and roll up balls the size of a ping-pong ball. Roll all the pieces at once so that you can see the consumption of the dough. If not calculated, then pinch off a piece from large balls and add deprived ones. Lubricate the molds with fat.
  • 3. Put the resulting balls in a mold and gently distribute the dough in shape with your hands. The dough is very plastic, so it is very easy to do it. See that there are no bald spots in the dough. We do this with all the molds.
  • Or we roll out the dough into a layer about 3 mm thick, cut out circles slightly larger in diameter than the diameter of the molds. If the baskets are closed, then for each mold there are two mugs. If with a lattice, then, respectively, one mug, and you need to leave the dough for decoration.

  • 4. Now we get the berries. DO NOT DEFROST the berries !!! Pour them into a bowl, add a spoonful of sugar and a spoonful of flour or starch - mix. The filling is ready.
  • 5. Distribute the berries evenly in the baskets. Do not pour the berries with a slide, otherwise the juice will flood the entire mold. Sprinkle the berries on top with the remains of flour and sugar from the berries.

  • We put the baskets on a baking sheet and in an oven preheated to 200-220 degrees for 30-40 minutes.
  • 6. After the allotted time, check the readiness of the test with a match. If the dough doesn't stick, then the baskets are ready!

  • From the proteins that you have left, you can whip a cool foam and decorate the meringue baskets.
