Focaccia with garlic and sourdough rosemary.

Ingredients

Dough:
Leaven 50 g
Water 100 g
Flour 100 g
Dough:
Flour 400 g
Olive oil 75 g
Dry white wine 120 ml
Sugar 1.5 tsp.
Salt 1.5 tsp.
Filling:
Garlic 3 heads (approx. 30 teeth)
Liquid honey 2 tbsp. l.
Balsamic vinegar 50 ml
Olive oil 2-3 st. l.
Dried / fresh rosemary 1 tsp. / 3 sprigs

Cooking method

  • Based on the recipe: Focaccia with garlic and sourdough rosemary.
  • Filling:
  • • Peel the garlic and lightly fry until golden brown with 2 tbsp. l. olive oil, you can add 1 tsp. l. dried rosemary, if there is fresh, then add greens from 2 branches (unfortunately I did not have a fresh one).
  • • Add honey, vinegar to the garlic and let the garlic caramelize over a tiny heat for 10 minutes.
  • Focaccia with garlic and sourdough rosemary.
  • • Remove the mixture from heat and let it cool.
  • • Spread the caramelized garlic evenly over the raised tortillas, pressing the garlic slightly into the dough. If you have fresh rosemary, you can break a twig and stick it into the dough too. It will be elegant and fragrant!
  • Focaccia with garlic and sourdough rosemary.
  • • Bake the focaccia over medium heat for 25-30 minutes.

Ilonnna, you have some discrepancies in the recipe.
The "ingredients" label says: Dough - 50 g of sourdough + 100 g of water + 100 g flour.

And in the "method of preparation" in the point "Dough" it costs: 50 g of sourdough + 150 g of water + 150 g flour. Where is it right?

I'm going to bake your recipe for focaccia. Actually, I used to bake focaccia before, but I made the dough as for your lean pies with potatoes. And for the filling I used olives / olives, cherry tomatoes (in halves), bell peppers (in pieces), etc. And my husband likes it when the top is greased with ketchup. True, this turns out to be a cross between focaccia and pizza.

I liked your recipe for focacci with garlic very much, I want to try it. Another question, what role does wine play in the recipe? Does it give a special flavor or what? I would like to try, but now the post ... Can we replace it with water? Or is it critical?

Valeria +, refer to the data in the ingredients list. In the description, I apparently described myself. And about the wine, eh! You should have cooked focaccia 7 numbers for the Annunciation! And now wine is not allowed until the end of the fast Wine gives taste, aroma and affects the fermentation process, but you can replace it with water, you just get a slightly different taste.
