Gingerbread bread in a Panasonic multicooker

Ingredients

300g honey
220g wheat flour
30g rye flour
50 g hazelnuts
1 bag of baking powder (2 tsp. Flat)
100 ml milk
1 egg
1 pinch of salt
Spice mix:
1 tsp with a heap of ground cinnamon
1 box l. ground ginger
1 \ 2 box l. pounded coriander
1 \ 2 box l. ground allspice
1 \ 8 pcs. nutmeg (grate)
4 heads of cloves (grind)
zest of one lemon
zest of one orange

  • This honey-based French muffin resembles many of our favorite gingerbread, but much less sweet. The recipe is simple, from the category "mix and put into shape". The spices commonly used are cinnamon, ginger, cloves, coriander, pepper, nutmeg, and anise. This time I also added a little ground hazelnuts (toasted, I like a little crumbly structure) and citrus zest - lemon and orange (can be replaced with a spoonful of orange jam). I don't have anise at home, so I always bake without it.
  • The cake turns out to be very spicy and not too sweet, it just goes great with tea or mulled wine. It becomes lush and soft due to the large amount of baking powder. Here the question arises - how was it baked before, before the invention of baking powder? To be honest, I don’t know, but the rye flour in most recipes suggests that there was some kind of leaven after all.
  • Like any gingerbread, this bread tastes better a day or two after baking. Store it in a bag at room temperature.
  • 1 mold 10x20cm
  • or 2 forms 8x16cm
  • preheat the oven to 180C
  • Heat honey and milk until honey dissolves. Do not boil! Cool below 40C.
  • Fry nuts (hazelnuts) for 15 minutes at 20 ° C, peel and chop.
  • Put both types of flour, nuts, baking powder, salt, zest and spices in a bowl or bowl of the food processor. Mix.
  • Pour in a not hot mixture, add an egg.
  • Knead the dough.
  • Transfer the dough to molds ...
  • Furnace at 180C for 45-50 minutes. Willingness to check with a wooden stick - there will be no sticky dough on it.
  • Cool, transfer to a bag if you are going to store.
  • Or chop if you're going to eat.

Note

I baked in a multicooker (I have a Panasonic 18). Baking mode -60 minutes. At the end of baking, I immediately opened the multicooker and took out the gingerbread.

This is actually a very fast and very tasty cupcake !!! Recommend !!!

Yesterday I just baked this cake in a diethical version (I forgot to write it right away), I completely replaced wheat flour with whole-grain "Garnets", instead of milk tea brewing (and in general any liquid is suitable: juice / nectar, coffee, etc.), instead of eggs, mashed with a fork banana pulp (50 gr.). Generally baked, the toothpick is dry. I don’t know what is inside yet, I didn’t cut it. But he didn't get up at all.
I tell you how I did it. I took flour tsz + rye (according to the recipe) + cereal 4 cereals (for the good of the case, otherwise it won't end in any way) only 250. Instead of an egg, 2 tbsp. l. vegetable oil (one of them is peanut), instead of milk bergamot tea 200 ml. Two hundred because I reduced the honey, took only 70 grams and added stevioside. Well, there were almost all spices, except for lemon and ginger.
