White chocolate mousse with flax seeds and pink pepper

Ingredients

White chocolate 250 g
cream 33% fat 300 ml + 50 ml
Brown sugar 2 h l
maple syrup 30-50 ml
butter 20 g
flax seeds 2 h l
pink pepper 2 h l
cognac (optional) 1 tbsp

Cooking method

  • 1. In a hot frying pan, melt the butter, add sugar, add maple syrup and heat until smooth. Add flaxseeds and pepper, stirring occasionally, and let them caramelize. Pour the mixture onto baking paper and let cool completely. Then grind into crumbs.
  • 2. Melt the chocolate in a water bath, adding 50 ml of cream. Let it cool to room temperature.
  • 3. Whip the remaining cream until a chantilly consistency, add chocolate, praline and cognac to them. Spread over the bowls and set in the refrigerator for a couple of hours.

30 min + 2-3 hours for hardening
