Ukrainian 40% peeled bread

Ingredients

Sourdough (100 g peeled, 150 water) 250 g
Peeled rye flour 100 g
Whole wheat flour 300 g
Fresh yeast 0.25 g
Salt 7.5 g
Water 225-325 g

Cooking method

  • Knead the dough until smooth, 5 minutes at low speed.
  • Leave for 1.5 hours of fermentation at 30 * C.
  • Form the bread and let it proof for 35-60 min at 35 * C.
  • Bake with steam, 45-50 min at 200-260C.
  • My recipe changes:
  • rye sourdough (100%)
  • 1 g fresh yeast
  • Serum with water 50/50
  • Ukrainian 40% peeled bread
