Obertukh (E. Molokhovets, 1861, recipe No. 3103)

Ingredients

Wheat flour 500 g
Cream 11% - 21% (drinking) 100 ml
Eggs 2 pcs
Butter 50 g
Yeast 2 tsp
Sugar 50 g
Salt 1/2 tsp
Cinnamon taste
Oil for lubricating dough circles
Candied fruits or dry jam, raisins, prunes, or wine berries to taste

Cooking method

  • Pour warm cream, yeast, salt, half flour into a pot or saucepan, dissolve the dough... Made in a bread maker, Pelmeni mode. When it rises, put the eggs, mixed with sugar, warm butter and the rest of the flour, knead well, let rise Dough mode. Take a saucepan, spread it with oil, sprinkle with breadcrumbs, put a tin tube in the middle. Take a piece of dough, roll out a circle the size of the bottom of a saucepan, into a finger thick, cut a circle in the middle so that this tin tube can pass. Prepare several such circles, put in a saucepan, spreading a circle with melted butter and sprinkling with sugar with cinnamon, dry jam or raisins, finely chopped prunes or wine berries; fill 3/4 of the saucepan, rise slightly and into the oven. I divided the dough into 3 pieces, each piece into 4 buns from which I formed circles, as in the original recipe, laid out in three forms, made a tube from the core of a roll of cling film, wrapping it with foil. Proofing - until the end of the rise in the oven with the light on and a mug of boiling water, baked at 180C until golden brown and dry sticks.
  • Dispense a total of 1 1/2 cups cream, 5 eggs, 3/4 cups butter, 1/2 cup yeast, 1/2 cup flour, 1/2 cup sugar, cinnamon, 2-3 crackers, jam, raisins, prunes or grapes, 1/4 lb. oil to grease mugs. I counted everything for 500 grams of flour.
  • * Garnets (for loose substances) - 1/4 bucket

The final shot made me happy!
Quite successfully, the composition contains several symbols of Christianity at once: Easter cake, willow, trinity (3 Easter cakes), the Star of Bethlehem, the abbreviation of the holiday greeting "XB".
Only the curtain let us down a little. Well, this is forgivable, given the work done by the author, including unmistakably converting the old units of measurement into the familiar modern ones.
Ikra
SchuMakher, this is just something !!! Well, there is absolutely no time to make such beauty, but I will take it to bookmarks. At least I'll dream for now!
How do you try, tell me what taste. All in all, it must be incredibly delicious!

I think quite, the current tube should be taken more then, in accordance with the size of the bucket
Antonovka
Mashun, I want to try today Only without a hole - because there are no tubes I have a question - how do you get such a delicious glaze? You can have a recipe and tell me - does it crumble later when cutting ??
Rita
Masha! You are a heroine !!! Are these the same cakes that you baked yesterday, with a sick child and other "adventures"?
I take off my hat and everything.

Lenok, glaze HERE... It crumbles a little, but not catastrophically. I had the powder with cinnamon, so it turned out a little beige, it was nice even

Rita yeah baked them! and two other types

Mash I'm sorry for the off-top in the topic, but I'm worried that the girls will buy something wrong
Girls, if you buy, then a reprint, which costs about 2,000 rubles, is not published in other publications completely, although in our usual measures of measurement, and a reprint is the spirit of that time there in old measures and is completely analogous to the issue of 1861.
Joy
Oh, what a miracle ... Mashenka, what a clever girl you are. And this is the first time in my life that I see such a miracle and have not even heard the name. Here is the darkness ...
Probably the dough will be layered inside ...
I took it to the bookmarks. When we eat the cakes, I'll try to bake Obertukh. The main thing is not to forget.
Margit
Aha, and I'll bookmark! And what an interesting name!
But today I will bake the already familiar Family Easter cake. True, I play with the recipe every year, and every time it is successful!
Albina
I, too, have not heard such a name. I will probably bake for Easter
sweetka
Girls, what do you think it will look like without paper?
SchuMakher
On Sunday I'll show you both the cut and the peeled barrel! If you look through the hole, you can see the layers.
sweetka
Mashun, it was the little hole that caused me puppy delight!

Yes, forgive me, Masha, for the link

Don't open the link, there is a virus.

Anna1957,
I'll remove the link now, but it's very strange - neither at work it screamed that a virus, nor at home

Mashaaaaaaaaaaaaaaa! I have dough like molten plasticine! from it is not something that cakes, even lumps can not be made. and it has already booted up flour in excess of the norm, and it absorbs the beech, like the Sahara water.
SchuMakher
Choy something?
sweetka
Did you have to melt the butter at just room temperature? I melted it. In short, an unreal amount of flour was thrown so that at least some semblance of a flat cake could turn out. shchyas is in the oven.
SchuMakher
Melt and wash with sugar
sweetka
and the roof is cracked ... but I'm not worried about that - it won't be visible under the glaze anyway. the main thing is that the inside is kosher

I sit looking at the cut. Her husband's voice behind his back: "Why is" Averbukh "called, is it his recipe?" Averbukh cutaway.
SchuMakher
Tell me that because a Jew, and I am a Jew in the context, although I am entirely the same
sweetka
Mashul! I bring you my Averbukh!
The only problem is WHAT to do with it now ?! So many muffins ...At least invite a whole regiment. Only, I'm afraid my husband will not understand ... the presence of a whole regiment of men in our apartment. If you say that Averbukh came to cut - will you believe it, what do you think?

SchuMakher
sweetka oh, what Averbushki and Averbushi are cute !!!! Let her husband carry to work And how does it taste?
sweetka
the taste is very wonderful! I still can't understand why it took me 2 times more flour. but, fortunately, it didn't affect the taste in any way!
SchuMakher
Scroll! Perhaps the eggs were ostrich eggs?
sweetka
Mnu has some experience in devouring ostrich eggs. No, not exactly they were.
