Ingredients

Cooking method

Grease your hands with vegetable oil, put the dough in a 28 Ø frying pan lined with baking paper. Use your hands to knead the dough in a circle and place in a warm place (oven, t 30 °) for proofing for 30 minutes.
Make cuts in the middle, grease with starch glaze (dilute 0.5 teaspoon of starch with 2 tablespoons of water at room temperature), sprinkle with slightly toasted sesame seeds and bake at 180 ° until golden brown.

250 ml milk
15 g fresh yeast

30 g margarine at room temperature
2 table. spoons of semolina
400 gr flour

In a bowl, grind the yeast with sugar to "flow" the yeast. Pour in the liquid, stir until the yeast dissolves. Pour in flour, semolina, salt, add margarine cut into pieces.
Knead elastic dough (I kneaded with a hook in a food processor). Cover the bowl with a bag and refrigerate for 12 hours. The dough should rise about three times.
Lubricate your hands with vegetable oil, divide the dough into 6 balls of 127 g each, cover with a towel and leave to rest for 15 minutes. Roll each ball into a cake about 15 cm in diameter.
Bake the cakes in a dry, hot (but not overheated!) Frying pan with a thick bottom under the lid. A couple of minutes on each side.
I greased the finished cakes with melted butter.
The cakes are practically holes, slightly rubbery ... mmmmmmmm
And on the second day, after spending the night under a plastic lid, they became softest and literally melted in the mouth.

In general, I did everything according to the author's recipe, but I divided the finished dough not into 6, but into 12 parts, and prepared the filling:

Mixed everything up - the filling turned out
Then: she rolled out 2 cakes from 2 parts, put them on one filling, covered them with a second cake, pinched the ends, like dumplings. It was baked in a dry skillet with a thick bottom, as in the original recipe. After removal, I lubricated the drain. oil, as in the author's recipe.
It turned out something crazy-tasty !!! I treated guests today - I barely beat off samples for a photo (I cooked right in front of them, so that it was hot). The guests got into the position, I did take a photo ... I usually make a double portion, and then I was modest. Thank you very much for the recipe, I believe that it contains great possibilities for variations - meat, vegetables, fish, so what will be available !!! For me, the main criterion was that my son ate two whole cakes, and he is extremely critical of my culinary delights (such as pasta and sausages - the best food in the world).
Everyone was stunned .... the guests were from the Middle East (Arabic) - they were more impressed than me. They asked me to convey my deepest regards to the author and some "envy" to her husband
