Very simple wheat bread

Ingredients

wheat flour 200 g
wheat flour VS 300 g
milk 320 ml
fresh yeast 12 g
sugar 1 tsp
salt 1.5 h l
ghee 20 g
maple syrup 3 tbsp

Cooking method

  • 1 Prepare the dough: grind 5 g of yeast with whole grain flour until fine crumbs, pour 200 ml of cold milk, stir until smooth and refrigerate overnight.
  • 2. In the morning, knead the dough: in milk warmed to room temperature (120 ml), stir the maple syrup yeast (7g) pounded with sugar. Combine the dough with flour, salt and milk-yeast mixture. Leave on for 5-7 minutes. Knead the dough for seven minutes. At the end of the batch, add oil and knead for a couple of minutes. Round and leave to ferment for two hours (or until 2.5 times increase).
  • 3. Place the dough on a flour-dusted cutting mat and form a loaf. Proof for about 1h-1h-15 minutes.
  • 4. Bake in an oven preheated to 230 degrees for the first 5 minutes with steam. Then lower the temperature to 200 degrees and after 10 minutes to 180. Bake for another 10-15 minutes. Before baking, brush the bread with milk, a pinch of salt and a teaspoon of maple syrup and make longitudinal cuts.

Note

The bread is very warm, creamy, light and fluffy. You can never say that it contains whole grain flour. The crumb is finely porous, the crust is thin and soft. The bread has a creamy nutty taste and aroma.

tatuana, mikulishna! Maple syrup can be replaced with 2 tablespoons of dark honey (preferably not buckwheat) and slightly adjust the liquid when mixing, since honey is thicker than syrup.
