Ingredients

Dough:
butter 115 g
granulated sugar 115 g
almond 180 g
eggs 4 things
lemons 2 pcs
wheat flour 125 g
poppy 30 g
baking powder 1 tsp
soda 1/4 tsp
Syrup:
juice of 1 lemon
granulated sugar 50-60 g
Glaze:
juice of 1 lemon
powdered sugar 200 g

Cooking method

  • Cooking a biscuit:
  • Grind the almonds into crumbs (in a food processor or blender), mix with flour, poppy seeds, baking powder and baking soda (it was not in the original recipe, but since there are zest and lemon juice in the dough, I added it).
  • Rub the zest and squeeze the juice from two lemons. Lemons for this pie are better for pachyderm.
  • Beat the softened butter with granulated sugar until creamy. Without stopping whipping the butter mixture, add eggs one at a time, whisking after each for at least a minute. Putting the mixer aside.
  • Add half of the nut flour mixture. Mix with a whisk or spoon. Add lemon juice and zest, knead. Add the remaining nut and flour mixture and knead again. Do not beat with a mixer!
  • Grease a baking dish (24-26 cm) with a little butter, transfer the dough into it. We put in an oven preheated to 180 degrees and bake until tender for 40-50 minutes (be guided by your oven). We check the readiness with a wooden toothpick. It comes out dry from a baked cake, and the cake itself is golden brown.
  • Cooking impregnation:
  • Bring the juice of one lemon and sugar to a boil with constant stirring. The sugar should dissolve.
  • With a fork or a toothpick we make punctures on a warm cake, soak it with syrup.
  • Let the cake cool and soak.
  • Cooking the icing:
  • Mix the icing sugar with lemon juice. In consistency, it should be similar to condensed milk.
  • Pour the frosting over the center of the cake and let it drain by itself, rotating the cake slightly. The thick icing will spread over the cake under its own weight and will resemble raindrops.
  • At this stage, I had a small opportunity. There was not enough powdered sugar at home. Therefore, I did not succeed in "raindrops".
  • Serve with a cup of coffee or unsweetened tea.
