Fast acting dry yeast 1.5 tsp.

360 ml of water,
2 tsp salt,
3 tsp cumin,
80 g boiled in "uniform" and grated or mashed potatoes,
70 g of whole grain wheat flour,
70 g whole grain rye flour,
100 g of rye bread flour,
170 g of wheat baking flour (1c),
200 g of premium wheat flour,
1 tbsp. l. vinegar
2 tbsp. l. vegetable oil,
1 tsp Sahara,
13 g fresh yeast.
Put everything into HP, bake according to the main program.

I realized that I either have thermonuclear yeast, or something else - when there were 2h38 minutes left until the end of the program (in Panasonic it is 4 hours), then the dough was almost crawling out of the bucket I had to mix it with "dumplings" a bit and put for proofing, I thought that for a start - for 35 minutes - but it was again almost under the roof, I had to urgently go to Baking it) Because of all these manipulations, the roof came out uneven, but did not fall, which means that everything is fine with me - it remains select the mode (I think next.once put on rye - it is an hour shorter, but without additional crunching - I don’t know).
I'll definitely try in the evening

Lena, I bake it both on the longest (whole grain) and on the shorter one - white bread - 3 hours 20 minutes, but my oven is designed for 1500 g, maybe that's why it won't come out (although the recipe is for 1000 g). If you like it, choose the mode, good luck!

Several days ago I returned from a tourist trip to the Czech Republic. Among other things, I really liked the gray bread with caraway seeds there. I found out that it is called Šumava and is sometimes sold in supermarkets in bags with a recipe printed on it. Unfortunately, I didn’t come across a package with a recipe, although such bread is really sold everywhere. This is how it looks in the original.

I baked the second option with potatoes. Of course, it was not without gag. Instead of potatoes in their uniforms, there was just boiled potatoes, and instead of water - potato broth. I had neither rye nor wheat flour of fine grinding. Replaced with wholemeal rye and spelled. Baked in the oven on the hearth.
The bread turned out to be very tasty and aromatic, although not as fluffy as I ate in the Czech Republic. Perhaps my flour was still heavier, although the dough rose beautifully, no worse than wheat flour.

I did it according to the second option, on buttermilk, calculated for the total weight of flour 500 grams. On the "Basic with raisins" mode in Panasonic HP.The only thing, all the liquid, yeast and flour, except for BC and 1C, were kneaded into a dough and put in the refrigerator for 6 hours.
