Pepper stuffed with carrots

Ingredients

sweet red pepper 8 pcs
carrot 0.5KG
tomato. paste 3 tablespoons
vegetable oil 50 gr.
onion 2pcs medium
greens for decoration 1bunch
garlic 4 teeth

Cooking method

  • Pepper stuffed with carrots
  • Pepper to remove seeds, rinse. Grate the carrots on a coarse grater, cut the onions into cubes and fry in vegetable oil until golden brown, put the carrots and simmer until tender. Then, add salt and pepper, add 1 tablespoon of tomato paste and a little water. Simmer until the water evaporates, then let cool and add minced or finely chopped garlic. Then fill the pepper with the resulting minced meat, put in a saucepan and cover with water so that the pepper is half covered with water. Let it boil, after boiling, add the rest of the tomato paste. Boil over low heat for 20-30 minutes. Then let cool and you can serve, decorate with herbs!
