Wheat bread with white malt

Ingredients

Dough:
wheat flour 1 grade 250 g
hot water 250 g
dry yeast 1 g
Dough: whole dough +
warm water 50 g
salt 9-10 g
wheat flour 1 grade 200 g
white rye malt 1 tbsp. l.

Cooking method

  • Pour hot (40-43 * C) water into a bowl for dough.
  • Sift flour on it and pour yeast.
  • Stir, cover with cling film and leave to ferment for 4-6 hours at room temperature * or for a day at 5-10 * C.
  • Dilute the finished dough with warm (36-37 * C) water and add dry ingredients. Stir, leave under a towel for 20-30 minutes and knead - with your hands or with a spiral mixer - until a smooth and almost non-sticky bun.
  • Ferment at room temperature * - two rises, after the second - shape the bread and put it in a mold. The dough is soft, it is convenient to use plastic scrapers when molding.
  • Proofing - an hour and a half, until the volume doubles. Cuts when baking in a mold are not necessary, they are purely decorative.
  • Baking - with steam, 10 minutes at 235 * C, 20 minutes at 205 * C and 5 minutes at 180 * C.

  • Today I tried to replace dry yeast with fresh yeast, 5 g. Here's what came of it: IMG_0492.jpg (in an airfryer, without a ring)

Note

This bread can be baked from any wheat flour: from premium flour you can without malt and knead the dough right away, without standing it for half an hour. From c / z - adding an additional 20-30 g of water (baked from Diamart grind No. 2). Pts. delicious it turns out from flour of the 2nd grade. Malt is a desirable but not required addition.
To my taste, bread is tastier (to me) if it has fermented with a low T *.
In general, it is probably worth giving this dough the name "starting" or "basic" - on its basis I bake many varieties of bread: corn, buckwheat, oat. Usually I just put the dough in the refrigerator, and then I decide that I will bake (what the family will ask ...)

Exactly! Didn't see "and"

And I just wanted to bake in a bread maker, without a program, just in baking mode, set the time as needed, and make the dough by hand .. although you can probably put it on the main program.

I apologize, I didn’t look for a long time - renovation!
Very interesting, how did it turn out in the bread maker? - I tried it, just during the renovation, in a "kitchen-balcony" - I liked it less. But m b. is it my old lady (17 years old, LG) to blame? Baking for the main program.

It turned out very well in hp, I put the dough in the refrigerator for the night, and then I bake it on the main program
