Wheat bread Rustic motif

Ingredients

wheat flour 1 grade 400 g
chickpea flour 65 g
flaxseed flour 35 g
sour milk (I use 200 ml
water 100 ml
salt 1.5 tsp.
sugar 1 tbsp. l.
vegetable oil 1 tbsp. l.
yeast 1.75 tsp

Cooking method

  • Put all the ingredients in the HP according to the instructions. Select the main program, medium crust. The weight of the finished bread is about 750 g. I always leave this bread on the heating for 20-30 minutes, no more is needed. It turns out he is not tall, dense. In color and texture it is similar to the black round "Stolichny". It is cut without crumbs and, if necessary, in very thin slices, at least 4 mm.

Well, oh-ooooooo beautiful and appetizing, it seems even the Spirit of bread can be heard through the monitor
Thank you, LyuLyoka
Delicious bread and new discoveries for you
And why is the color so "traditionally brown"? After all, there is no rye flour or malt

due to chickpea and flax flour

Judging by the recipe and the photo, it is a wonderful bread, I would love to try it, but the problem is that I have never met chickpea flour and I have no idea what it is. I make flaxseed in a coffee grinder from flaxseeds, but where can we get chickpea in Ukraine? Or replace it with something?
Merri
Inna, thanks for the information! I definitely did not see such on sale, how I bought a bread maker, I studied the entire "bread" assortment of the city.

I think that such exoticism can only be in Auchan, Karavan and other HYPERmarkets, such as Metro. One of these days I will be in Kiev Auchan on Petrovka, I will unsubscribe on the assortment of flour
LyuLyoka
In Ashan, I just did not meet. Different flour "Garnets" is in the Platypus and the Seventh Continent. And chickpea, probably, can be replaced with pea.

In Kiev, neither Platypus nor the Seventh Continent, as far as I know, is observed. And I haven't seen Garnets flour either. About replacing with pea - you need to think. And in general, since I was interested in this recipe, I will surf the Internet, suddenly somewhere I find a chickpea. I will write about the search.

Pea flour in bread is a very specific taste. For example, I couldn't eat such bread

Oh, well, then it's not worth replacing. Chickpea flour does not give a particularly strong taste, at least in this proportion and in this combination. And just wheat with chickpea, I have not yet tried baking, I'm afraid my husband will suspect something and refuse to eat

Is it for everyone, or is it just me, on the second batch, the scapula barely turns? A tight but beautiful bun. I'm afraid to break something. I have LG. So I fell asleep and baked. Thank you.

Do you bake everything strictly according to the recipe? and all the ingredients (chickpea and flaxseed flour) are there?
Bo I haven’t even seen them on sale during this time and, accordingly, I don’t know what kind of work they are, but most likely heavy

No, the bun should not be very tight. The flour is very dry, apparently, it had to be adjusted during the first batch.
