Ingredients

Dough:
Room temperature water 125g.
Fresh yeast (dry) 3d. (1y.)
Wheat flour 110g.
Dough:
Opara
Room temperature water 145g.
Fresh yeast (dry) 6d. (2d.)
Wheat flour 285g.
Corn flour 25g.
Salt 10g.

Cooking method

  • Prepare dough. Dissolve the yeast in water (mix dry with flour), add flour and mix until smooth. The dough should be like thick pancakes. Cover the bowl with plastic wrap and let the dough stand at room temperature for 8-10 hours.
  • For the dough, pour the dough into the bucket of the bread machine, add water. Run any program for 1-2 minutes to obtain a homogeneous state.
  • Mix both types of flour, rub in fresh yeast with your hands (just mix dry with flour). Pour into a bucket of bread maker. Add salt.
  • Dough mode. The gingerbread man is elastic, soft. After kneading, leave the dough for 10 minutes, then turn off the bread maker, take out the dough, form a ball, put in a container (without oil), cover with foil and leave in a warm place for 2 hours.
  • Then knead the dough, divide into 3 equal parts, form balls (dust the table with flour if necessary) and leave for 15 minutes.
  • Next, form a baguette from each piece. The formation technique can be viewed here:

  • Preheat the oven to 230C.
  • Cutting the baguettes from one edge to the other is the signature style of these flutes. Since the dough is quite damp, you can soak the razor blade or knife in water or vegetable oil to make the cut even. The depth of the incision is about 1 cm.
  • The author advises to bake with steam for 15-20 minutes until a beautiful golden brown color. I have no technical ability to make steam, so I bake without it. Before baking, I just sprinkled the baguettes with water.
  • Remove from oven and let cool on a wire rack.

  • shl. I would like to say separately about the jackpot. I used this method of proofing for the first time, due to the fact that my baguette holder does not fit into the country oven. The baguettes turned out to be even !!!!! BUT the edges of the baguettes adhered to the paper during baking and remained light. About 10 minutes before the end of baking, I completely removed the paper and left the baguette on a baking sheet for browning.

Recipe from Local Breads, Daniel Leader. The baguettes have a crispy pimpled crust and are very porous on the inside, but at the same time not completely empty. They are not very laborious, but a long dough approach allows the dough to develop better and acquire a more complex smell and taste. The recipe was developed by the Leader based on the famous Parisian baguette "la flute gana" invented by Bernard Ganachaud. The original can be purchased in Paris at 226 rue des Pyrenees.
