Muffins with cottage cheese

Ingredients

Dough:
butter 50 g
granulated sugar 70 g
egg + egg yolk 1 piece + 1 piece
sour cream 100 g
baking powder 1 tsp
wheat flour 110 g
lime or lemon zest (optional) 1 tsp
Curd mixture:
cottage cheese 250 g
sour cream 1 tbsp. l. (30 g)
egg white 1 PC
powdered sugar 3 tbsp. l.
granulated sugar for decoration (optional)

Cooking method

  • Dough:
  • Sift flour with baking powder. On a fine grater, grate the zest of one lime or half a lemon.
  • In a separate bowl, beat the softened butter with sugar, egg and yolk. Add zest and beat again until creamy and smooth.
  • Add sour cream, stir. Add flour and mix the dough thoroughly again.
  • Curd mixture:
  • Beat the protein with 1 tablespoon of powdered sugar until crisp peaks. Mix cottage cheese (if cottage cheese with grains - rub through a sieve) with sour cream and the remaining powdered sugar. Gently add the whipped protein into the curd mass.
  • Fill the muffin molds with dough (one third of the volume). Put the curd mixture on top of 1 tbsp. l. for each muffin.
  • Bake in preheated 180aboutFrom the oven (top shelf) for about 20 minutes. Be guided by your oven. Finished muffins can be sprinkled with granulated sugar on top and left in the oven for another 3-5 minutes.
  • It is better to serve warm.
